While less salt in a dish can be managed easily by adding a little more of the ingredient, it becomes a problem when the salt is in excess. The situation, however, is pretty common. A lot of times we end up adding more salt than required to a dish, and eventually ruin the taste as well as all the efforts put in to prepare the dish.

For dry vegetable recipes such as aloo-gobhi, one of the best ways to balance excess salt is to add lemon juice, chopped tomatoes or tomato puree. Another alternative, as suggested by chef Bhadouria, is to add curd.
